Vegan Buffalo Shrimp Tacos

Serves 4 people

Ingredients

  • 1 package Breaded Vegan Shrimp
  • 2 tablespoons vegan butter
  • 1/2 cup Buffalo Sauce
  • 1/4 cup ranch dressing
  • 8 small tortillas (grilled if desired)
  • 1 cup shredded red cabbage
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup shredded lettuce
  • 1 8.5 oz. can sweet corn, drained
  • 1/2 cup diced red onion
  • 1/4 cup vegan crumbled blue cheese
  • 1/2 cup light vegan sour cream

Instructions

  1. Heat oven to 375F
  2. Spread shrimp on a baking sheet and back for 10 to 15 minutes until browned.
  3. While the shrimp is cooking, mix butter, buffalo sauce, and ranch in a small sauce pan.
  4. Heat on low to medium heat, stirring occasionally until melted and mixed thoroughly.
  5. Once shrimp has cooked, place the cooked shrimp into the saucepan, tossing to fully coat with the sauce.
  6. Create individual tacos with shrimp and tortilla’s, topping with shredded lettuce, shredded cabbage, cilantro, onion, corn, and blue cheese.
